If anyone can tell me how to actually pronounce "nicoise" properly I'll be eternally grateful - anyway this is a recipe from my health club and its really yummy as well as healthy!
Serves 4
3 boiled eggs chopped 415 g canned salmon, drained and boned (OR I made it with Atlantic Salmon filets panned seared and then flaked) 200 g green beens blanched and cut in half (OR I used frozen baby beans blanched) 1 cup cherry tomatoes - halved 1/4 cup parsley roughly chopped ( OR I didnt have fresh parsley so I used baby rocket) 2 Tbsp parmesan cheese ( i actually forgot to put this in so if you haven't got any don't worry!)
Dressing 1 Tbsp olive oil 2 Tbsp balsamic vinegar cracked black pepper
1. Combine eggs, salmon, beans, tomatos and parsley in a large bowl. MIx well and transfer to serving bowl 2. Combine dressing ingredients together & mix well 3. Drizzle salad with the dressing then sprinkle with the parmesan cheese
Mmmm delicious - I actually made this yesterday and packed a serve each for the MOTH and I to take to the beach for our beachside picnic - nice and easy to serve on the sand!

Looks tasty (except for the tomatoes, yuck).
And it's pronounced nis-wuz.
