I am not usually the experimental type, but one day I decided to do something different to my cottage pie. I just found it was a bit plain, so I added things that I knew go with mince well.
Ingredients for the meat mix:
* 600g beef mince
* 1/2 an onion, chopped finely
* 1/4 cup of peas
* 1/4 cup of corn
* 1/4 cup of carrots (in small pieces, I use frozen julienne pieces in cut them smaller)
* 2 beef oxo cubes
* 2 packs of roast meat gravy powder (you can use any gravy and the 2 packs equate to about 3 - 4 tablespoons of powder)
* 2 Tblsp Worcestershire sauce
* 4 Tblsp Tomato paste
Ingredients for the potato top:
* 6 potatoes
* 2 Tblsp butter or margaine
* splash of milk
* cheese if desired (I did one side cheese for James and one side no cheese for me.)
To start off, peel your poataoes and dice them up, put them in a pot and boil them to the consistency to make mashed potato. Just after you put them on, start browning your mince. Once the mince is brown put it in a dish (I use a 21 cm x 21 cm pyrex dish), I then dice the onion and add that to the mince, then I add the peas, corn and carrots.
Preheat oven to 180C (unsure of F)
To make the sauce, use a seperate bowl and put the gravy powder, oxo cube, worcestershire sauce and add about a 1 and 1/2 cups of water. whisk the ingredients together and add the tomato paste until the mixture is thick (which is about 3-4 Tblsp).
Pour the sauce mix over the mince slowly. Whilst mixing the sauce and the mince together. You need to pour slowly because if you put too much sauce in the mix will be runny and end up with cottage soup (which I have done before.) Once it is all mixed together and to the right consistency, the potatoes should be done.
Start mashing the potatoes and whilst doing it add the margarine/butter, and a splash of milk, the milk is to make the potatoes nice and creamy. If you like you can add some grated cheese to the mashed potato. Once it is all mashed cover the top of the mince base with mashed potato. You can also add cheese to the very top of the potato. It is up to you.
Put it in the oven until lighly brown and crispy on top (if that's without cheese on top). But with cheese on top wait until the cheese is melted and slightly brown)
It is absolutely delicious. My favourite cottage pie ever. (When I make it next I will try remember to take a photo and add it on here).
