My favorite pan fried squash recipe.
I reserve a couple of sausage patties and a couple of crisp slices of bacon for this recipe and we are eating it at least every other night right now.
Crooked neck squash . 2-3 depending on size. I pick em young about 7 inches long.
Cut into quarter inch slices.
1/4 olive oil in bottom of a large frying pan.
1 medium onion quartered and seperated.
2 green bell peppers quartered.
Flash fry the squash and all ingredients. Meaning get the oil and skillet nice and hot and then cook squash for about 6 minutes with onions and green peppers stirring once.
Crumble sausage patties and bacon into small pieces and add to mix .
sprinkle with Parmesan cheese and serve.
Yummy, yummy for the tummy.

Beer battered Green beans 1-2 lbs. fresh string beans 1 Cup beer (lager works well) 1 t. salt 1 C. all-purpose flour Vegetable oil for deep frying enough to cover the beans in a large skillet. Trim and discard tips of beans. In a bowl, whisk the beer, salt into the flour until smooth but still foamy. dip the beans in the batter. Don't over do the whisking it will make the beer flat and they don't taste the same. In a large deep skillet, heat oil until it sizzles when a bit of batter is dropped into it. shake off excess batter from beans or add and fry as it makes a great crispy addition to salads. Fry about 20 at a time. Cook until golden brown, flipping the beans over with tongs. Repeat to cook all of the beans. Drain on a paper towel and sprinkle with additional salt if desired. I like sea salt . Hubby eats these like french fries with ketchup or bar b que sauce to dip them in. I prefer a little horseradish sauce. If you need to reheat , cover with paper towel of damp cloth and reheat in microwave 30 seconds at a time X 2 Yummy, yummy Warning these things are addictive.
