I have a new recipe that I "tweaked" to suit me. The original recipe I found in a Betty Crocker's book, a new one that I got at a garage sale in Hamburg several weeks ago for a dollar. LOL
I don't even remember the name of the recipe in the book, but I call this (your choice of fruit) Crunch.
I use blueberries because I Loooooooooooooooooooooove Blueberries!!!
2 Cups Blueberries (I cooked mine down with a little butter and sugar first)
3/4 Cup Brown sugar (I used almost a full cup)
3/4 teaspoon cinnamon
3/4 teaspoon nutmeg
1/3 Cup Butter
1/2 Cup plain flour (I'll use 3/4 C next time)
1/2 Cup rolled oats (I'll use 3/4 C next time, for more crunch)
Cooking (butter flavored) spray
Soften butter (but don't melt!) then add sugar to it. Stir well. Add remaining ingredients. You may have to use your bare hands to mix this well, it doesn't want to separate like it should otherwise.
Spray butter spray onto 2" deep square baking dish. Pour fruit directly into dish. "Sprinkle" mixture on top of fruit.
Bake at 375° for 30 minutes or until top is brown and "crunchy".
Now --- I made a glaze to drizzle over it, but the cookbook didn't call for one. It's good either way.
Glaze:
2 Cups powdered sugar
2 or 3 Tablespoons milk
1 teaspoon vanilla
Mix ingredients and stir until all lumps are gone. You can add more or less milk to reach desired consistency of glaze.
Enjoy!
Kim
P.S. I have photos of this, and as soon as I remember, I'll post them...
P.S.S. You can use any fruit that you like, just make sure to drain it first. Especially if you cook them first... but you may want to use SOME of the juices. I did.
