This cake is a must for those that are watching their weight or diabetics. Not only is it healthy... but delicious. Fat, Sugar and Egg free. Dawn's Fruit Cake Ingredients One packet (375g) Mixed fruit. 1 1/2 cups of water. 2 cups of self-raising flour 1 cup of grated carrot Nuts (optional) 1 teaspoon mixed spice. Method Mix fruit, water and spice. Add to saucepan and simmer for 10 minutes. Remove from heat and allow to cool then mix in flour and carrot. Turn into loaf pan (greased but not lined) and bake at 180 celsius (356 fah) for 50 minutes. There you go Epi... a healthy treat for your son's lunch box.

It is good Epi... I enjoy it as it is or even with portion with hot custard poured over it. The recipe was invented by one of the volunteers at the Flinder's Medical Centre and seems to become a firm favourite with everyone who tries it. Even Zonked couldn't stuff this one up.
