2 1/4 c. flour 1 1/2 c. packed brown sugar 1 tsp. baking soda 1/2 tsp. salt 1 egg 1 c. buttermilk 1/2 c. butter melted 1 tsp. vanilla 2 c. diced peeled apples
Topping 1/2 c. packed brown sugar 1/2 c. chopped pecans 1/3 c. flour 1 tsp. cinnamon 2 tbsp. melted butter
Topping.. mix together drizzle the butter on top set aside..
In a bowl.. combine flour , sugar, baking soda & salt.. in another bowl wisk together egg, buttermilk, butter, vanilla.. pour into dry ingredients.. sprinkle in apples.. stir till moistened..
Spoon into muffin pan sprinkle with topping.. cook 375 degrees 25 minutes.. till firm to the touch..

Gonna try these real soon, they sound yummy. Also gonna try that rice pudding for the hubby- he loves the stuff. Got any bread pudding recipes? He loves that too.

It must be bad over there at the moment Laura. We're getting reports of people dying because of the heat. Short of you all installing airconditioning I don't really know what to advise.
In South Australia we tend to close our homes up as much as we can and stop relected light from entering our homes, this includes keeping the windows closed and the curtains drawn. I have awnings that roll down over the windows to stop the relected light before it hits the glass... even aluminium cooking foil taped to the outside of windows can help in reducing the heat and glare. Mind you, our heat is very dry with low humidity.
Never mind... just a few short weeks to go now and you'll be cooling down and we'll be heating up... I've had enough of our winter.

Yea Chips, it is bad over here. This is one of the worst summers I can remember. I have not had much rain since the first part of April. I keep asking for rain but don't get much. I have cracks in my yard that are 5 inches wide and one is 34 inches deep. Real dangerous walking outside. My yard is looking like a parched dessert. PS: how come you and other Aussies don't post on Laura's and Phil's site any longer?

Blimey mate!! You ask some curly questions butI'll do my best to give you an honest answer.
Laura and Phil are wonderful people, in fact Phil and I think a great deal alike on many matters regarding forums.
As I said in another reply to one of your posts... Forums take on a life of their own and they develop in their own way. Now I'm speaking for myself and not any of the other Australian members, I have no influence on them at all.
I was a little concerned about the way some posts were being treated. As a member I addressed those concerns in a post where generally the members did not agree, which is their right to do and I acknowledge that right.
I have retained my membership in the Pharm and I do stop by every so often to catch up with the posts. No doubt I'll eventually return to posting but now is not the time.
Hope that answers your question.
