Old-Fashioned Creamy Rice Pudding
3 cups milk 1 cup whipping cream 1/2 cup rice 3 eggs separated 1/2 cup brown sugar ( packed ) 1 tsp. vanilla 1/2 tsp.salt 1/2 cup raisins pinch of nutmeg
On top of double boiler of simmering water.. stir together milk and cream. Add rice, cover & cook until rice is tender for 1 to 1 1/2 hours. Beat egg yolks until frothy.. Gradually add sugar, vanilla & salt. Slowly stir into rice.. Add raisins.. Beat egg whites until soft peaks form.. Fold into rice and pour into buttered 8 cup baking dish.. sprinkle nutmeg or cinnamon.. Place rice in a shallow pan of hot water 2" deep.. place in oven bake 350 degrees 45 minutes.. Serve.. Garnish with fresh raspberries..

Sounds much like the recipe my Grandmother used to make Nutmeg but for the life of me I'd never be able to eat it. This was a staple in the aftermath of WWll... there wasn't much else around you could make a dessert from. I don't have many bad memories... but in my case... rice puddin' was one of them. Bread and butter pudding was the other one.

I don't think anyone is older than Keith. Just remembered something else.. my Granny used to put a spoonful of jam in my rice pudding to get me to eat it.

It is good Willow.. at anytime of year.. When I ran a kitchen in a Seniors Residence.. everytime I prepared this.. there was never a leftover portion.. and I was making 45 meals 3x daily..
