I got hungry for Orange Chicken one night and I didn't feel like going out to eat, so I improvised. I also wasn't in the mood for looking up recipes..........so I made one up. KimAs always... start with quality ingredients.
Orange Chicken & Shrimp
1 1/4# Chicken breast, de-boned and skinless 1# Gulf Shrimp 1 medium onion, sliced into lengths 2 Mushrooms, sliced (that's all I had) 4 Tablespoons real butter 2 Tablespoons Peanut Oil (veg. oil will do) 1 box Angel Hair Pasta Sage Garlic Powder Red Pepper (crushed, not ground) Italian Seasonings Soy Sauce Worschestire Sauce 1 Can Orange Juice Concentrate - pulp free
Here is my chicken breast, cut into chunks, and shrimp...I cut up my onion and mushrooms and added those to the mix.Here are the other ingredients before mixing...I removed the shrimp and added the Italian seasonings, garlic powder, a few shakes of sage, and red pepper flakes.(next post)

Put your 2 Tablespoons oil and 2 Tablespoons butter into pan over HIGH heat - and do NOT turn it down the entire cooking time - and let it melt together.Put water in a boiler, and add your other 2 Tablespoons butter, and some salt. Let it come to a rolling boil, then add pasta.Add chicken, shrooms, and onion mixture all at once, and continually stir this so it doesn't burn. The idea is to sear it quickly.Let it cook, and keep stirring...When onions are tender and transparent (mostly), add shrimp...When shrimp is fully cooked - but JUST BARELY cooked - add soy sauce and worschestire sauce - I just shake on about 8 shakes each.Stir it up good, and then add your orange juice concentrate... (the secret to a thick sauce is to NOT add water to this!)...Cook for about 5 minutes more, then turn off heat and remove from heat altogether....YUMMY!!!Son put Parmesan Cheese on top of his... but decided later that it's better without it!

That does look good. Have you ever tried making it with apricot nectar instead of the orange juice?

I may try it with peaches, as I put up peaches every year and I know I have some canned/jarred.
