I got all my stuff together... and took pictures. Ingredients and Utensils. Okay, we had only small-to-medium-sized potatoes, so my son peeled and cut about 12 into large chunks. After that, we washed them and put them in a large pot to boiling. While they were boiling, I chopped and/or sliced my onions and mushrooms.... I used my egg slicer for the mushrooms, it works great! (I have many uses for this little gadget, LOL) I added them all to the boiling potatoes, not turning them down at all. Then I took my tater masher, and mashed up a few of them to thicken the broth a bit. After adding the bacon bits, this is what I had... (1/2 Cup bacon bits) Next, add pepper and salt... this much, but I had to add a "touch" while eating to suit my taste. Then I added about a half can of Evaporated milk and about 1/3 block of Velveeta cheese.... after simmering for a few minutes, this is what I had.... (and I put it in a large crock pot so it would cook while I was at church).... Right before I left for church, I wanted something a little "different".... since I'd NEVER put parsley in it before, I thought, that's it, I'll put parsley in it... LOL So I did. This much... And that was supper Wednesday night!
