Tater Soup.
Cut up three or four taters, set aside. Peeled or unpeeled, your choice.
Peel and cut up a whole onion, set aside.
Cut up 4 or 8 slices of bacon, whatever you think you can get away with and still call it tater soup.
Milk Cheese Water Salt & Pepper or other seasonings
Fry the bacon till it's almost crisp. Add the onions, cook till they're transparent. Add the taters and let them brown just a tiny bit. Add water and cover about twice.
When the taters are boiling, turn down the heat to a med-low setting and add some milk (about 2 cups, more for thicker soup). Let it simmer till the taters are cooked thoroughly. Add some cheese (your choice of what kind) to the bottom of a bowl or soup cup and then ladle your soup on top of the cheese.
French bread is good with this, so is a salad. Of course, I like mine with more tater soup. LOL

Okay I used 6 thick slices of bacon, and 5 medium taters...... LOL
I used four different cheeses to add in the cups/bowls..... Smoked Cheddar, American, Mozzarella, and Shredded Cheddar....
Man was it goooooooooooooooooooooooooooood...... and yes, Epi, it doesn't get much simpler. It's also good with buttered toast.....

I make a tater soup like yours, but I also add Leeks to mine.

Onions or leeks, both are good.... oh, and I added about 1/4 cup dried parsley to the sizzling concoction before adding water........

Jules... did you? gypho I didn't get the chance on the weekend to make it, but I went over the supermarket at 7am this morning and brought the stuff to make it so I can have it for my dinner tonight, and I will let you know what I think. I am sure I will love it because I love anything with potatoes in it.

This Tater soup was so yummy. I thought while I was cooking the bacon and onion I might as well cook it with garlic, and after putting the potatoes and water in I also put some black pepper in as well. I thorougly enjoyed it. I will be making this more often.
I had one of my neighbours over for dinner so she could try some of the soup as well. She made some pakoras and we had those with the soup as well.
My neighbour loved the soup as well.
Every time one of us cooks a new recipe we get each other to try it.

What is pakoras? Yes, I know I can google it, but since you make it, I'd rather have you tell me....

I did on Saturday, and it was gone so fast. Hubby liked it, Maria iked it, and so did I! I was told I could make that soup anytime!

LOL you should have seen my son wrinkle his nose when I said we were having tater soup..... I said, you can eat it or do without. End of story. He smelled the bacon and onions, then asked when it would be ready....... He ate three bowls. gypho

You was asking what pakoras were.
The only way I can explain it, is that it is a small version of a hamburger patty, but it is made of vegetables and spices. It's origin is from India. I will have to get the recipe from my neighbour as she made them, and they are very yummy. I will post the recipe for these in the recipe section of the forum on the weekend.
