Here is another one I'd like to share.
1 ling fillet (or any good stir frying fish), sliced 1 onion, sliced Garlic, chopped Ginger, chopped 1 red capsicum, thinly sliced Snow peas carrots, sliced very thinly Mushroom, sliced very thin Celery, thinly sliced Light Soy sauce
Method
Heat oil in pan, then add in onion, garlic and ginger, fry for a minute, then add in Ling Fillet, lower heat and fry gently for a few minutes. Add in capsicum, celery and carrot, fry gently for a few minutes, then add in mushroom and snow peas, fry for a few minutes. Add in Light Soy Sauce (I use Chang's). Add a little water if neccesary, lower heat, cover and allow to cook very gently, for a few more minutes until fish is done. Serve with boiled rice. I normally serve it with brown rice, but it will be just as good with the white variety.
