I think alot of people will like this !!
2 cups flour 1/3 cup sugar 1 tablespoon baking powder pinch of salt 1 cup of whipping cream fresh mint leaves ( to decorate )
For the Filling : 1 pound of Strawberries 3 tablespoons of confectioners' sugar 1 cup of whipping cream
1 - Preheat the oven to 400 degrees. Grease or butter a baking sheet.
2 - To make the shortcakes, sift the flour into a mixing bowl. Add 1/4 of the superfine sugar, the baking powder and salt. Stir well.
3 - Gradually add the cream, tossing with a fork until clumps form.
4 - Gather the clumps together, but do not knead the dough into a 6-inch log. Cut into six slices and place the slices on the prepared baking sheet.
5 - Sprinkle with the remaining sugar, then bake for about 15 min., until light golden brown. Leave to cool on a wire rack.
6 - Meanwhile, mash a quarter of the strawberries with the confectioners' sugar. Stir in the remaining strawberries.
7 - Just before serving, whip the cream until soft peaks form.
8 - Slice each shortcake in half horizontally. Put the lower halves on individual serving plates and top with some of the cream. Divide the strawberries among the six shortcake halves. Replace the tops and decorate with mint leaves. (optional) Serve with the remaining cream.
9 - ENJOY !!!!

I'll have to print this off for my duaghter, she LOVES strawberries. I buy 3 punnets most weeks and she eats most of them!!
