I threw this together the other night, it was easy and turned out rather well (got the MOTH's seal of approval!) so here it is. Serves 4
1 kg (2.2 lb) skinless chicken thighs 1 pckt Continental Cheese & Leek Soup 150 ml (5 floz) tin of Low Fat Evaporated Milk
1) Cut chicken thighs into thirds 2) Brown chicken well in a bit of oil 3) Add the soup made up as per the packet instructions 4) bring to boil and simmer for around 20 mins
Meanwhile cook some rice
5) Just before serving add the Evaporated milk and stir through until heated with out boiling . I also added a sprinkle of dried parsley at this point.
Serve over the rice with cracked black pepper ! And a nice glass of Savignon Blanc to accompany it of course!!
Variations
Any other packet soup that sounds tasty Add small broccoli florets / chopped carrot after step 3 Add asparagus at step 5
