Ingredients: 1 Tablespoon vegetable oil 1 small onion, chopped 4 cups fresh broccoli 2 cups chicken broth 1 cup ricotta cheese 1 cup milk 1 teaspoon lemon juice 1/2 teaspoon salt 1/2 teaspoon pepper Heat oil in saucepan. Saute onions for 3 minutes. Add broccoli, and broth; bring to boil. Reduce heat, cover and simmer 10 to 15 minutes or until broccoli is tender. Remove from heat and cool slightly. In blender container combine ricotta and milk until smooth. Add to soup. Stir in lemon juice, salt and pepper. Puree in batches in blender. Return to saucepan and heat through, but do not boil; stir frequently. Serve hot or cold.
Serves: 6

Its a great favorite here in the U.S.A. you can get it in most resturaunts. I like it best without cheese in it myself. But my favorite soup is Lobster Bisque...

Although it' been on the menu for a couple of weeks, I only got to FINALLY make this last night and it's definitely going the the Family Favourites list! The MOTH was looking very doubtful every time I suggested cooking it but even he had to admit it was very tasty. In fact, I think I'll have to double the quantity next time.

Right at this very minute it's on the stove top gently heating and will be hot and ready to eat in about 45 minutes. I actually did the basics yesterday and then left it for 24 hours, I find the flavours become more intense that way. I did vary from the recipe a little, I pit in a small chopped inferno chilli and some crushed garlic when the onion was frying, left out the salt and added extra pepper. I have tasted to finished product and it's delicious... well done Sterling... Thanks. Oh! And I've cut thick chunks of homemade bread and smothered it in garlic and herb butter. That will go in the oven to heat through so we can eat it with the soup.

We were in the Outback resturaunt on Monday and I was telling my husband about this thread and how you two had never heard of cream of broccoli soup and Willows comment of how they were leary of it. It is a very common soup here, and it is on most menus, just like clam chowder and french onion soup. Love them all. We had a resturaunt that made the best veg. beef soup and they closed up. Zonked's wife and I used to go there almost every night and order their soup and of course their strawberry pie. But we got married and stopped cruising all over the place. lol Good thing they closed up I would be calling her right now to go for some.

Yes, the soup was delicious and my wife enjoyed it as well. As usual I made a huge pot full and we've frozen a lot into individual servings.
PS... It was even more enjoyable with the garlic bread.

Glad you liked it, I would have felt bad to have had you make it and then hate it. You wouldn't have needed to, I really like making new recipes and anything we don't like Cara AKA Disposadog will always gobble it up. Makes a change form tinned food for her!!

Had this again tonight and I was very happy to note that this quantity, made with low fat milk , was only 3 WW points per serve Mmm tasty and good for us!!
