This is so tasty you wont notice it's healthy!
Serves 4
400 g fettucine pasta 3 teaspoons cornflour 1 cup Low Fat Evaporated Milk (Carnation Light & Creamy if you live in OZ) ½ Cup chicken stock 125g bacon, chopped (ALL fat removed) 2 cloves garlic, crushed ( I use crushed garlic from the jar) 1 brown onion, finely chopped olive oil cooking spray 150g Button Mushrooms, sliced (I use tinned champignons sometimes) ¼ cup flat leaf parsley 9 (I often forget to buy this fresh and just sprinkle with parsley flakes)
1.Cook pasta in a large saucepan of boiling salted water until just tender
2.Blend cornflour & 1 tablespoon of milk to a smooth paste. Add remaining milk, stock & salt and pepper
3.Heat a non-stick frypan over medium - high heat. Add bacon, garlic & onion. Spray with oil. Cook stirring for 6minutes or until golden. Add mushrooms. Cover & cook stirring regularly until mushrooms tender.
4.Drain pasta. Ste aside. Return saucepan to stovetop over medium heat. Add milk mixture. Cook, stirring until sauce just comes to the boil. Add pasta, bacon mixture and parsley. Reduce heat to low. Toss until heated through. Season with pepper & serve.
Per serve = 3.5 g fat, (saturated fat 0.6g), 1975 kJ WW = 6.5 points

I hate to admit this but it was delicious. We both enjoyed the meal and guess what it also got the BSA. BSA you ask? That's the Boot Seal of Approval... he scraped his dish clean and was looking for more. Well done Willow... great recipe.
