Take one mango, peel (instructions below), slice quarter to half inch slabs off the pit. Cut those slabs into small pieces, say 3/4 X 3/4 inch. Add one green onion sliced crosswise, maybe 1/8 inch slices, including green part. Mince some fresh ginger--about 1 tsp, a bit of cayenne pepper, freshly ground black pepper (McCormick's sells a mixture of cayenne and black pepper called hotshot, if you use it, add some more black pepper to the recipe). Chop up some cilantro, Tablespoon or so. Add a couple of Tablespoons of diced red bell pepper, a pinch or two of salt. Add a bit of zest of lime and the juice of 1/2 a lime. Very refreshing! To peel a mango, use a small knife to cut an shallow incision from the stem end of the fruit to the base of the fruit. Make a total of 4 incisions, in other words quarter the peel. Then, lift the corner of each quarter with the knife and pull it away from the fruit. It's messy, but it's worth it. After cutting slabs from the pit, treat yourself to getting the rest of the flesh by gnawing it away! It's the prerogative of the mango butcher.
