PICKLED VEGETABLE SALAD
7 cups shredded cabbage 3 cups shredded carrots 3 cups green pepper slices or rings 2 cups onion slices 4 cups white wine vinegar 1 cup sugar 1 tablespoon salt 1/2 cup pickling spices
Combine Vinegar, salt, sugar, and spices (if you don't want to leave the spices in the salad, tie them up in cheesecloth, and remove before adding vegetables). Boil for ten minutes. Add vegetables, and boil an additional 5 minutes. Pack vegetables in sterilized jars leaving 1” headspace, then cover with vinegar mixture leaving 1/2” headspace, and add lids and bands. Process in boiling water bath for 5 minutes.

This is a good side dish for a BBQ. Remember that the longer it sits, the better it gets.
What kind of pickle was it? we have so many. Have you ever tried watermelon pickles?
