Salmon Mornay
Serves : 4
Preparation time : 5 minutes Cooking time : Approximately 25 minutes.
Ingredients
30g reduced salt margarine
2 tablespoons plain flour
1 cup low fat milk
½ cup grated reduced fat tasty cheese
1 cup frozen Peas, Corn & Capsicum
2 stalks celery, chopped
Pink Salmon 415g can, drained
1 cup coarse fresh breadcrumbs
1/3 cup grated tasty cheese, extra
2 tablespoons chopped fresh parsley
Instructions
In a small saucepan, melt butter; stir in flour and cook for 1 minute.
Gradually add milk, stirring until sauce is smooth. Continue to cook stirring until sauce boils and thickens.
Add tasty cheese and stir until cheese melts.
Add frozen Birds Eye Peas, Corn & Capsicum and celery. Stir constantly until boiling.
Gently fold in John West Salmon. Season to taste and spoon into a 1 litre ovenproof dish.
Sprinkle evenly with breadcrumbs and extra cheese. Bake in a preheated oven at 180ºC for 15-20 minutes or until golden brown and heated through.
