Oh I love pasta too!
Here's a few recipes for you.
Sausage Penne Dinner
1 lb Sweet Italian Sausage
1 C thinly sliced Red Onion
1 C thinly sliced Red Pepper
1 C thinly sliced Mushrooms
(if you don't like them, omit them)
8oz uncooked Penne Pasta
2 C Beef Broth
1 C Evaporated Milk
1 t minced Garlic
2 t Italian Seasoning
1/2 C Shredded Cheddar Cheese
1/4 C. Parmesan Cheese
Remove sausage from casing. Crumble in a large skillet. ( I use cast Iron) Cook on med to med high.
Add Onion, Pepper, and Mushrooms. Cook until sausage is brown and veggies wilt.
Add Pasta and broth. Stir well. Bring to a boil. Reduce heat and simmer 15 mins.
Add Evaporated Milk, garlic, and Italian Seasoning. Cook until thoroughly heated. Do Not Boil!
Remove from heat and add Cheddar cheese. Stir until cheese melts. If you don't like a lot of cheese, reduce to 1/4 C Cheddar Cheese.
Sprinkle with Parmesan Cheese and serve.

Cheddar Shrimp and Penne
2 cups penne or other tube shaped pasta
2 garlic cloves, minced
2 Tablespoons butter or margarine
2 Tablespoons flour
1/2 tsp salt
1/4 tsp pepper
2 cups milk
1 1/2 cups (6 0z) Shredded. cheddar cheese divided
1 lb med, shrimp
1 can corn drained
Cook pasta according to pkg directions. meanwhile, in a lg saucepan, cook the garlic in butter over med heat for 1 minute. stir in the flour, salt and pepper until blended. gradually add milk. bring to a boil.
Cook and stir for 2 minutes or until thickened. reduce heat; stir in 1 cup of cheese until melted. Remove from heat. Drain and add pasta then the shrimp and corn to the cheese sauce. Put in a greased 2 qt baking dish. Cover and bake at 350 degrees for 25 minutes. Uncover; sprinkle with remaining cheese and bake for 10 to 15 minutes longer or until bubbly.
Makes 4 - 6 servings

Chicken Spinach Fettuccinie
Frozen Chicken strips Cooked in a little olive oil and fresh garlic cloves for about 10 min.
Add diced sweet tomatoes and about 1/4 cup a couple slices of bacon chopped up. Saute for about 3-5 min. add fresh spinach leafs and cook till leaves are wilted. I added just a touch of salt and pepper when finished.
Mix with cooked fettuccine, adding a little butter or olive oil in necessary. I sprinkled top with extra bacon and a little grated Parmesan. I also saute some extra tomato, garlic and bacon and put it on some french bread, sprinkled with mozzarella, Parmesan and cheddar cheese and baked at 375 for about 10 minutes.
Absolutely yummy!

Alfredo Lasagna Roll Ups
8 lasagna noodles
1 tablespoon olive oil
1 (10 ounce) package frozen chopped spinach
2 tablespoons thinly sliced green onion
1 pint part-skim ricotta cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1 egg
21 ounces Alfredo-style pasta sauce
1 cup shredded mozzarella cheese
Bring a large pot of lightly salted water to a boil. Add lasagna and cook for 8 to 10 minutes or until al dente. Rinse in cold water and drain well.
Meanwhile, in a large sauce pan over medium heat add oil and cook broccoli or spinach and green onions until tender, stirring frequently. Remove pan from heat and stir in ricotta cheese, Parmesan cheese, salt and egg.
Preheat oven to 375 degrees F.
Place noodles in a single layer on a sheet of waxed paper. Evenly spread some of the cheese mixture on each noodle. Roll up each noodle from the short end, jelly-roll style.
In a 8x12 inch baking dish, spoon about 3/4 of the Alfredo sauce on the bottom and spread evenly. Arrange the rolled noodles, seam side down, in the dish. Top with mozzarella cheese and remaining sauce. Cover loosely with foil and bake in preheated oven for 30 minutes or until hot and bubbly and the cheese is melted.
