Creamy Chicken & Mushroom Pasta.
Cook the type of Pasta of your choice by following the directions on the packet. Time the completion of the cooking with the rest of the meal.
You'll need Chicken... suggest skinned and boned leg fillets or chicken breasts... poached or saute in a pan. Allow to cool then dice the chicken into cubes and set aside.
In a large skillet
Melt one good tablespoon of real butter
Add...
a tiny quantity of dried chili flakes - 4 cloves of garlic (crushed) a teaspoon of Italian Herbs, one medium onion finely chopped
Saute until onion is translucent and tender
Sprinkle a generous amount of white pepper over mixture.
Add 5 - 6 smallish mushrooms (chopped) to the mixture and slowly add 300 ml of thickened cream.
Cook stirring constantly for 7 - 10 minutes or until sauce has thickened.
Add Chicken pieces season with salt and ground black pepper. Cook for a further 5 minutes or until chicken is heated through.
Add the cooked pasta and toss until it is evenly coated with the sauce. Add more Italian Herbs if desired
Serve with Garlic Bread.
Enjoy.

Absolutely a lovely dish! Big hit at our house tonight! Maria loved it! she had seconds.... In her wee little voice, as she handed me her plate, she said, "More?" I would make this again... and again.... and again.... Thanks Chips for posting the recipe!

I still have to try it as I especially love mushrooms, pasta and chicken. Anything recipe that dad (Chips) put on the forum would be good. Dad makes a lot of yummy meals.
It is good to see Dad enjoying a pasta dish, as he is not overly keen on pasta, whereas I absolutely love pasta.

Wow I didn't see this until now! Anyway I just made this lovely dish just the other night. We still love it and Maria always asks for seconds! This little girl loves spicy hot food...if she can eat Kemche.....she can eat just about anything that is spicy hot!

This recipe has somewhat evolved since I first published it.
Consider adding some finely chopped pepperoni, bacon or shredded ham to the initial frying mixture...
.... and a small can of prawns (shrimp), green beans and peas to the mixture just before adding the cream.
This not only adds to the bulk of the dish but makes it look a little more attractive.
In fact you can just about add and subtract anything you want.
